Production area:
San Marzano, Salento, Puglia. The area is about 100 meters above sea level and benefits from great diurnal temperature variations. The soil is shallow, clayey and with a
good presence of rocks.
Harvest period: Second week of September.
Vinification:
Soft cold pressing of part of the grapes; drawing off of the remaining part after 12-24 hours of skin contact. The musts are then blended and fermented in stainless-steel tanks at 11°C with selected yeasts.
Ageing: In stainless steel tanks.
Ageing potential:
A wine that preserves its organoleptic characteristics for 2 years.
Tasting notes:
Color: brilliant rose with ruby red reflections. Aroma: intense and persistent, with cherry, rose and pomegranate notes.
Taste: good body, fresh and balanced to the mouth.
Best served with:
Italian style starters, fish soups, roasted or baked in foil fish, fresh or slightly aged cheeses.
Serving temperature:
About 12-14°C.
