VINIFICATION
Cold gentle press to extract the colour. The must is chilled and transferred into steel tanks, where it remains long enough to separate the solids from liquid. Alcoholic fermentation follows at a temperature between 13° and 16°.

Production area:
San Marzano, Salento, Puglia. The area is about 100 meters above sea level and benefits from great diurnal temperature variations. The soil is shallow, clayey and with a
good presence of rocks.

Harvest period: Second week of September.

Vinification:
Soft cold pressing of part of the grapes; drawing off of the remaining part after 12-24 hours of skin contact. The musts are then blended and fermented in stainless-steel tanks at 11°C with selected yeasts.

Ageing: In stainless steel tanks.



Ageing potential:
A wine that preserves its organoleptic characteristics for 2 years.

 Deze Rosapasso Biscardo kan men omschrijven als een elegante, soepele en verfrissende rosé.
Heel wat aroma's van wilde aardbeien en kersen.
Lange en soepele afdronk. Heerlijke rosé op basis van 100% Pinot Nero druif.

Deze wijn komt uit het prachtige terroir aan de zuidelijke oever van het Gardameer.
De naam {FREEDA} is opgedragen aan de Scandinavische nicht van de gravin Cecilia Beretta uit Verona, die de naam geeft aan de boetiekwijnmakerij van Pasqua Family.
De druiven worden zorgvuldig geselecteerd op perfecte rijpheid om een correcte rijping te verzekeren;
korte maceratie op de schil zorgt voor een perfecte kleurextractie en de gisting bij een koele temperatuur zorgt voor de versheid. Stijl: Met een delicate, rosé bleke kleur is {FREEDA} een fantastische combinatie van kruidige en fruitige aroma's.
Vooraf in de neus zure kers, frambozen en groene peperbollen; in de mond grote mineraliteit en frisheid met een gestructureerd lichaam, dankzij de Carménère
