On old maps, the place now known as Caparzo is called Cà del Pazzo, a name we have given to a wine born of a selection of grapes from our vineyards located at Caparzo and San Piero Caselle. Cà del Pazzo was produced for the first time in 1982, and is therefore one of the first Supertuscans to have been produced in the the Brunello production area. Produced only in the best vintages, and in limited quantities, it is destined to especially passionate, attentive wine lovers.
AREAS OF ORIGIN OF THE GRAPES: - “Caparzo,” 220 meters above sea level, in the northern part of the Appellation. Terrain: sandy clayey Pliocene sediments. - “San Piero – Caselle,” 250 meters above sea level, in the eastern part of the Appellation. Terrain: sandy clayey.

PRIMARY FERMENTATION: the different grapes are fermented separately for 6 days at a temperature of 28-30 °C, with subsequent delestages and pump overs.

The Polígonos creed is a selection of the best lots from different mountain terroirs within the Uco Valley.
The criteria includes differences in altitude, soil and climate that define the sub-regions of San Pablo, Paraje Altamira and Gualtallary. Expect an aromatic, red fruited style slightly reminiscent of Loire Valley franc.
The wine is aged in foudres, limiting the oak influence, and playing on its elegance and freshness.
The palate is dry and floral with an herbaceous leafy undercurrent. Not your typical Argentine red.
This need time in the bottle to gather itself.

A jestful caper from Spain’s trio of grapes from the RedHeads Studio team. But this is no Spanish hero. Our playful Vin’atus struts dark, brooding Aussie pizzazz and delicious dark cherry fruit. The debut 2015 vintage racked up five golds and 92pts from James Halliday...!
The 2016 underwent small batch open fermentation before being hand-plunged. We then gave the wine some extended maceration on skins to build the flavour. Matured for 14 months in oak in a combination of new and used French and American oak.
Tasting Note
Plum and sour cherry notes with white pepper, vanilla and spice, like Christmas! Silky tannins on the palate with juicy fruit to support and that lingering sweet oak notes to follow.
Food Pairing
Roast garlicky lamb or a rich rabbit stew would flatter the deep fruit and spice of the wine, spaghetti with rich puttanesca sauce or sticky ribs from the barbie.

All my Single Vineyard Wines are made with minimal interference throughout the vinification. During fermentation natural yeast are used with no enzymes. Maturation takes place in neutral vessels to bring through the unique vineyard characteristics, that's specific to the site. The handcrafted approach by human nature helps to add to the final balance of this unique product".
My philosophy is to create great single vineyard wines from unique soil, climate and location. It's the soil with all the microbes, cycle of elements and the help of living organisms that create the heartbeat for my vines. The location towards the sun wind and holistic climatical conditions reflects the uniqueness of each vineyard

Production area:
San Marzano, Salento, Puglia. Vines are grown at an altitude of around 100 meters above sea level. The soil is clayey and not very deep, with a good presence of rocks. Medium/high temperature in summer, with good evapotranspiration.

Over 50 years old bush vines, with 4/6 buds per plant and an average production of 1 kg of grapes each.

Winemaking
Red vinification, with thinning of the grapes and maceration on the skins at controlled temperature. Pressing is carried out with the aid of pneumatic presses, that delicately compress the head of the skins, avoiding the discharge of bitter tannins while promoting that of the anthocyianins, so to provide a deeper colour. Once alcoholic fermentation is over, the wine spontaneously carries out malolactic fermentation. After natural clarification, the wine is fined in steel tanks.

Ageing
18 months in 100% 500L French oak barrels, using 20% new oak.
Tasting Notes
Fragrant blueberry, red cherry, and a hint of floral perfume open up to reveal fresh plum with layered sweet and savoury spices. The complex fruit flavours follow on the palate with fine but grippy tannins and a fresh fruity acidity. Typical spiciness is layered and complex - cardamom, fennel, black pepper, nutmeg and clove, with the delicate use of oak complimenting the spiciness. Refined yet powerful with a lingering fruity finish.
