GRAPE VARIETY
Grenache - Syrah

ORIGIN
The grapes come from three terroirs: 65% come from the eastern Corbières (coastal vineyards yield grapes that lend freshness and elegance), 20% from the edge of the Fitou (a terroir located further south whose grapes offer lovely aromatic richness) and 15% from the Corbières Boutenac cru which give this wine its depth.

VINIFICATION
The grapes are handpicked and brought to the winery in 40 to 50-kg tubs where they are immediately transferred to tanks without crushing or pumping. Maceration lasts 15 days. The press wine is added to the free-run wine.

AGEING
40% in barrels (20% new oak) and 60% in stainless steel

tanks.

TASTING NOTES
Very intense black colour.
Floral nose reminiscent of violet along with fine spices (white pepper), black olive and notes of humus and tobacco.

ORIGIN
Some of our Carignan grapes are grown at our estate near Narbonne along the Canal du Midi on vines that are over 50 years old. These are supplemented with grapes grown in the calcareous clay soils of the Minervois for their tannins and aromas of ripe fruit, while grapes from a cooler area in the Corbières mountain range lend freshness and fruitiness.

VINIFICATION
A third of the grapes are handpicked and vinified as whole bunches for freshness and notes of fresh fruit. The rest are vinified traditionally using long macerations that can last up to 3 weeks to lend structure and silky tannins. 80% of the wine is barrel-aged for 6 to 8 months, some of it in new oak.

TASTING NOTES

ORIGIN
The grapes for this wine come from four terroirs: the area of Nîmes which gives complex notes, the eastern Aude valley which lends elegance, the Béziers plain which brings richness and the western Aude region.
VINIFICATION
Relatively long maceration. Part of the cuvée undergoes carbonic maceration. 6- to 9-months ageing in oak barrels for a part of the blend, the remaining is aged in stainless steel vats.
TASTING NOTES
Dark robe.
Aromas of blackcurrant, blackberry, cherry, peat, cinnamon, thyme.
Round, rich and long palate with ripe tannins.

WINE AND FOOD
Enjoy with chicken with ratatouille, stuffed tomatoes, lentils with salt pork.

SERVING SUGGESTIONS  Serve at 17°C.

VINIFICATION
Macération pelliculaire à froid, puis fermentation des seuls jus de goutte à 18 degrés.

Elevage en cuve inox sur lies fines et mise en bouteille précoce en février de l’année suivant la récolte.

La vinification BIO est conforme aux nouvelles normes Européennes tout en restant dans la tradition de l’élaboration d’un Côte Catalane.

DÉGUSTATION
Robe brillante, jaune or aux reflets verts.
Nez élégant dominé par des notes de raisin Muscat et des agrumes.

Vignes sélectionnées pour leur rendement limité (35 hl /ha). Les
raisins, cueillis à maturité optimale, font l'objet d'une sélection
rigoureuse.
Vinification traditionnelle égrappée avec sélection des premiers jus de
goutte. Macération de trois semaines en cuves inox thermo régulées

Terrasses argilo calcaires de galets roulés

CÉPAGES
Vin à dominante mourvèdre 80%, syrah 10% et grenache 10% Rendement 35 hl /ha

VINIFICATION
La vendange est sélectionnée, les baies sont ensuite mises en cuve
pour macérer pendant 18 à 20 jours.
La fermentation est thermo-régulée.
Les trois cépages sont vinifiés séparément.
